The article analyzes the current state and dynamics of the turkey meat market in the European Union and Ukraine. It examines trends in turkey meat production and consumption in leading EU countries, including Poland, Germany, France, and Spain. It identifies key factors shaping the market structure, including growing demand for dietary products, the impact of epizootic risks and regulatory restrictions, and the specifics of production policy. It is shown that Poland has strengthened its position as the largest producer of turkey meat, while France has lost its leadership due to high costs and a focus on less profitable crosses. The experience of Spain, which has significantly increased production volumes thanks to an active advertising campaign and the development of deep processing, is highlighted. Special attention is paid to the transformation of the Ukrainian market, which in recent years has gone from import dependence to active export orientation. The decline in domestic demand due to military events has led to a reorientation of producers towards foreign markets. It has been established that Ukraine is gradually integrating into the European space, and the geography of exports has expanded significantly thanks to trade liberalization with the EU. It was concluded that turkey meat has significant competitive advantages – high nutritional value, low fat content, rich composition of vitamins and microelements. Combined with the growing demand for healthy food, this ensures the industry’s prospects even in conditions of supply shortages and epizootic threats. The EU market is highly adaptable, and new opportunities are opening up for Ukraine to establish itself in international markets through export expansion and production capacity development. The results obtained can be used to improve poultry farming development strategies and strengthen competitive positions in the global agricultural market. Further scientific research should focus on assessing logistical challenges, the impact of military factors on exports, and opportunities for diversifying the range of turkey products.
